Health from the Inside Out – Nature’s Path to Health

Join us August 15-17, 2025 for this special weekend with Dr. Arvi Generoso and Mercy Ballard, RN.

Mercy is the founder of Years Restored. Mercy went to medical school in Mexico and has worked as an IV infusion nurse in the US for over two decades. When Mercy developed unusual symptoms of celiac disease in 2004, she had to embark on her own search for answers. 
A Seventh day Adventist Christian, Mercy believed that the best diet would be an anti-inflammatory whole food plant based diet as recommended in the Bible. 
However, she was confused by the recommendations of health care practitioners to adopt a paleo lifestyle. She set about to discover what was causing so many on plant based diets to continue to have chronic leaky gut issues. 
Finding significant improvement for herself, she and her husband opened the Years Restored lifestyle center, and since 2013 the plant based protocol and menus used at Years Restored have helped hundreds of clients find remission and healing.

Dr Arvi Generoso is a native of the Philippines and now resides in the beautiful Pacific Northwest with her husband, Allan, and their three children. Dr Generoso completed her residency training at a University of Illinois affiliated Community Hospital in Chicago, where she also served as Chief Resident. She is a Board Certified Internal Medicine Physician. With her husband Allan, they manage Generoso Health, a private medical practice with a focus on lifestyle changes to help reduce medications. The family enjoys traveling, hiking, skiing, and other outdoor pursuits and are involved in music and club ministries for children at Whipple Creek Church. They feel privileged to live in such a time as this, seeing prophecy fulfilled, and Jesus coming soon!

Sample RECIPES

AMARANTH CEREAL

  • 1 C dry amaranth (soaked 12 hours, sprouted 12 hours, then rinsed)  
  • 2 C water 
  • ½ tsp unrefined salt 
  • ½ C milk of choice 
  • ½ tsp of honey 
  • 1 ½ C berries 
  • ¼ tsp of cardamom (optional) 
  • ¼ tsp of coriander (optional) 

In a saucepan, bring amaranth, salt and water to a boil. Cover and simmer on low for 60 minutes, until all the water is fully absorbed. Stir often.  (Slow-cooking overnight in an Instant Pot will work well – on high setting if available).  Serve with a plant-based milk and sweeten with honey (see milk recipe section).  Garnish with fresh berries, coriander and cardamom. 

QUINOA BREAKFAST CEREAL

  • 1 C dry quinoa (soak dry quinoa for 12 hours, then sprout for 12 hours)
  • 2 C water
  • ¼ tsp unrefined salt
  • ½ – 1 tsp honey
  • 1 ½ C berries
  • ¼ tsp of cardamom (optional)
  • ¼ tsp of coriander (optional)
  • 2 C plant-based milk of your choosing

In a saucepan, bring sprouted quinoa, salt and water to a rolling boil.  Cover, lower heat, and simmer for 15-20 minutes until water is fully absorbed, stirring occasionally.  Serve with milk and sweeten with honey.  Garnish with fresh berries, coriander, and cardamom.

BROWN LENTIL BREAD

  • 3 C dry lentils, (soaked 12 hours, sprouted 12 hours, and rinsed; it will double in amount – use all)
  • 2 ½  C water  
  • 1/3 C  coconut sugar
  • 1 Tbsp salt
  •  1 tsp rosemary ground
  • 1 ½  C ground flaxseed

 Blend the lentils, coconut sugar, salt and water.  In a medium bowl poor the flaxseed. Add the blended ingredients to the bowl and mix in well.  Line a baking tray with parchment paper.  Place 1 large spoonful of batter onto the baking tray and continue until finished with the batter.  Bake at 400 degrees F for 40 minutes, until lightly golden (place it on the upper part of the oven)

COCONUT/ SUNFLOWER BUTTER

  • 1 ½ C shredded coconut
  • 1 ½ C sunflower seeds, soaked and dehydrated
  • 1 tsp salt (add towards the end)

Process for about 20 minutes until creamy (use food processor)

SMOOTHIE

  • 1 Tbsp ground flaxseed 
  • ½ C berries 
  • 1 apple 
  • 2 Tbsp shredded coconut 
  • 2 Tbsp carob powder 
  • 2 dates 
  • ¾ cup water 

 Blend all ingredients and serve. 

COCONUT MILK

  • 1 C coconut chips/flakes
  • 1 C warm water
Blend the above ingredients well.  Strain with a nut milk bag or fine mesh strainer if desired.
